pumpkin & oat porridge (gf)

I spent my day on my feet on work and I couldn’t have done it without this porridge. I’ve been obsessed with throwing different porridge combos together and this one is super delicious! It’s also a good way to sneak some veggies into your day. I am pretty sure this will become a favourite for me. It tastes like pumpkin pie, which is just the best thing ever and is perfect for a crisp winter morning.

Makes 2 small serves (or if you’re me, 1 big tasty serve)

INGREDIENTS

1/2 cup steamed pumpkin, mashed/pureed

1/2 cup rolled oats (use gf oats to make the recipe gluten free)

1 cup rice milk (plain milk is fine as well)

1/2 tsp mixed spice (+ more for garnish)

1 tsp honey (for garnish)

handful walnut pieces (for garnish)

3 strawberries, sliced (for garnish – use whatever fruit you have on hand)

METHOD

Pop the pumpkin, oats, milk and spice into a pot and cook until liquid is absorbed/nice and thick (5-10 mins).

Remove from stove, put into a bowl and place strawberries and walnuts on top. Drizzle over the honey and a small shake of extra mixed spice.
