quinoa breakfast bowl + a very happy new to you all
Happy 2013! I hope you are all having a great year, so far. I’ve been quite busy (lazy), so it has been a while since I sat down to read my favourite blogs and say hello. I trust you all had an amazing Christmas and I cannot wait to catch up on the recipes I have missed from that period.
What have I been up to lately? Lots of cooking, beach trips and catching up with loved ones. I recently took in a foster dog and it has been an amazing experience, so far. It is all too obvious that he came from an abusive home and he was terrified of everything initially. In just a month, Otis has come far. When I first brought him home, he would tremble and throw himself on the ground when you greeted him. He is now running to me for a cuddle, ears up and tail wagging. I try to expose him to as many fun and happy situations as possible, and I can tell he is starting to feel safe. It is interesting watching Otis react to stimuli as well as witnessing the changes that are apparent as he becomes more confident in himself. He still freaks out occasionally and I have some work to do before he is ready to go to his forever home but we are getting there!
Apart from that, I am just looking for a job and getting organised before another year of university starts. After a few weeks of pigging out and relaxing, I am definitely looking forward to getting back into the swing of things. I applied to transfer to a social work degree and soon find out whether I got an offer. Fingers crossed. I think it is going to be a great year and I have set some exciting goals for myself. A lot to look forward to!
QUINOA BREAKFAST BOWL
Serves 1
Ingredients
1/3 cup quinoa
large handful of raisins
1 tbs chia seeds
1 tsp ground flaxseed
6 nuts (i used almonds & cashews)
fruit of your choice, cut into large chunks (berry & mango is my choice)
maple syrup, to serve
METHOD
Cook quinoa according to packet directions, throwing raisins into the mix in the last few minutes. Fluff with a fork.
Add chia, flax, nuts and fruit, then toss gently.
Serve topped with maple syrup and enjoy!

Quinoa is so versatile is there nothing it cannot be? You are clearly a very caring , kind and thoughtful person and it is such a lovely thing to do to sacrifice your time to care for a poor creature who lucked out last time round. Hope that little cutey doesnt break your heart when he goes, good luck finding a job etc.

I bought a packet of organic quinoa a while ago but haven’t had the chance to use it just yet. This breakfast bowl looks so simple and tasty, gotta try it for breakfast next week!
Oh yum! This is exactly the type of thing that I eat for breakfast… though I usually add a big dollop of natural yoghurt on the top. This is my first visit to your blog and… uh, I think your title has a massive error. Your photography definitely isn’t bad!!
